Guide to good practices for the production of attiéké
Abstract

This African standard describes good practices for the production of attiéké, resulting from
fermentation physical and thermal treatments of fresh and sound roots of cassava plant, belonging
to the species Manihot esculenta Crantz, of the family EUPHORBIACEAE.
It applies to attiéké intended for sale and human consumption. This standard does not apply to
attieke for further processing.
NOTE: Attiéké may be known as Akyeke in some areas.
